Getting my groove on
/To complicate my life, the hubs and I agreed that he would take the next 30 days to get back into his fitness groove…which means, he won’t really be around when the kid and I get home to entertain the boys (kid and dog) while I get dinner ready…which means, my mad dash might become of the lunatic variety. Here we go!
One of my solutions for weekday sanity: weekend food prep.
To prepare for the week ahead, this weekend I made:
-Black eyed peas, froze additional servings for future use
-Chicken broth (needed to clear out the freezer and produce drawer)
-2 batches caramelized onions (ok, first batch burned- I fell asleep, alright?!)
-Dark choc chip oatmeal pecan cookies…with flax and reduced sugar
-Basil-spinach pesto
What could I possibly do with these items for the week ahead? Black eyed peas are obvious- I’ll serve those with white rice and another veggie. Caramelized onions will make anything better, I could add them to some skillet chicken and call it a day. Chicken broth ALWAYS comes in handy. I freeze it in Ziploc bags and use as needed. Cookies are a big deal, we’re talking afternoon snacks for the little guy here…minus the processed food guilt, plus they’re not super sweet. Pesto could be a huge win, or just a quick way for us grown ups to grub during the week.
I’ve been trying to get the kid to eat his greens…and there was this one time I got him to eat some pesto pasta. Tonight I made these lunga pasta noodles with the pesto, Parmesan and sun-dried tomatoes. Lets see how we do! If the pesto works out for him, I’ll have some stored in the fridge. I added a layer of olive oil on top of the finished pesto to help keep it nice. I’ll know after dinner tonight whether it should just get frozen for another period in time.
So…all this time in the kitchen means something else had to give. I don't know where the dog got a hold of whatever that is that he ripped to shreds.
